Caprice Panino
October 26, 2006 – 3:16 am2 slices good whole grain bread cut 1/2 inch thick
2 TBS olive oil
2 thin slices fresh mozzarella
2 slices ripe tomato
pepper to taste
3-4 large fresh basil leaves, rinsed and patted dry
+ Lightly brush both sides of each peace of bread with olive oil. Layer mozzarella, tomato, pepper, basil leaves between slices.
+ Place in a skillet with a heavy pan over the top to press down the sandwich while cooking. (Or press down with a metal spatula. Or use a panini press.)
+ Cook for 3 minutes per side or until golden brown. Slice and serve with grapes or fresh pineapple or fresh pear slices.
I haven’t tried this yet, but my mom sent it to me and I don’t want to lose it.
