Hushpuppies and Chocolate Mousse

They weren’t as good as huspuppies I’ve had… I might try putting diced Jalapeños in them next time… they just didn’t have much flavor (also might have had to do with the oil not being used to fry meat beforehand… I’m not sure)
I have some Kroger brand “Creamy Horseradish” and I think they used Miracle Whip instead of Mayo… I hate Miracle Whip…
Dark Chocolate Mousse
5 1/4 ounces bittersweet chocolate, coarsely chopped
14 ounces cold heavy cream
3 large egg whites
1-ounce sugar
Sweetened whipped cream, for garnish, optional
Shaved bittersweet chocolate, for garnish, optional
Place chocolate in a large bowl set over a bain marie or in a double boiler at a low simmer. Stir chocolate until melted. Turn off the heat and let stand.Beat the cream over ice until it forms soft peaks. Set aside and hold at room temperature. With a mixer, whip egg to soft peaks. Gradually add the sugar and continue whipping until firm.
Remove the chocolate from the bain marie and using a whisk, fold in the egg whites all at once. When the whites are almost completely incorporated, fold in the whipped cream. Cover the mousse and refrigerate for approximately 1 hour or until set. Serve in goblets topped with more whipped cream and shaved chocolate, if desired.
I made like a 3/4ths recipe… I tried to do it by hand with a borrowed whisk, but ended up caving in and borrowing a hand mixer…To top it off I mixed about 2 parts sour cream and 1 part brown sugar with a dash of pumpkin pie spice… It was alright, but I think the mousse needed to be a little sweeter than it was for that to work…
If you ever get a chance, try that sweetened sour cream… it is delicious
I’m getting to the point where my 3 mixing bowls are not cutting it… I might have to get me a set someday…

Sorry… I just can’t stand it.
I also don’t like when a product falsly represents that it is a mayo product and is actually whipped whatever that stuff is.
When you take the fat out of Mayo, you have to replace the flavor with something… Miracle Whip goes with sugar, and Mayo shouldn’t be sweet.
